Coconut Cake
2:54 PMThis is from a site called seven spoons and it is a Coconut Cream Icebox Cake. I've posted this because it reminds me of Coconut Cake and I love Coconut Cake. If anything it's right after Red Velvet cake in my all time favourite cakes, granted a decent chocolate can give it some strong competition. To me a great coconut cake is light and melts in your mouth and the icing should have just a hint of sweetness so it doesn't overwhelm you. Also a good coconut cake, for me should be so good it makes you want to eat enough and leave the rest for later.
This recipe is from All Recipes and I can't believe how simple it is. I can't wait to try it, especially with this icing.
Ingredients
- 2 cups white sugar
- 1 cup butter
- 5 eggs
- 1 teaspoon coconut extract
- 1 cup buttermilk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup flaked coconut
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Mix flour, baking powder and salt together and set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time; beat well. Mix in coconut flavoring. Add flour mixture alternately with buttermilk, mixing well with each addition. Fold in coconut. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted into the cake comes out clean.
